Lamb Salad: My Latest “Super Simple” Recipe

This "Lamb Salad" is my newest addition to my super simple recipe repertoire! Full disclosure: I often cook without exact measurements (think, a bloop and a blop). While I try to figure out precise amounts for those of you who like things more exact, today we're going with estimates—this is too good not to share!
The Lamb: Scramble fry a pound of ground lamb (predetermined by the packaging) with onion and garlic until crunchy. Season liberally with a spice mix like Blackened Saskatchewan or any of your favorites.
The Salad: On a plate, layer your greens. Top with a good chunk of diced English cucumber, half a diced apple, chopped cilantro (omit if you have an adverse reaction), feta cheese, and roasted pecans.
The Dressing: My balsamic vinaigrette is simply an equal mix of olive oil, balsamic vinegar, and maple syrup, plus a squeeze of Dijon mustard.
To Finish: Top the salad with a generous spoonful of the crispy fried lamb and drizzle with the dressing.
Yummy, healthy, and SO easy—15 minutes from start to finish! I've been eating this on repeat as a whole meal. Give it a try!
